Crosby's Flax-Jacks w/Coconut Whipped Cream & Sugar-Free Maple Syrup



  • 1/2 cup ground golden flax seeds
  • 2 large organic eggs (farmers market preferred)
  • 3 TBS unsweetened full fat coconut milk
  • 1 tsp apple cider vinegar
  • 3/4 tsp vanilla extract
  • 1 TBS collagen
  • 1 TBS lakanto
  • 3 shakes cinnamon
  • pinch pink salt

 Coconut Whipped Cream

  • 1 can unsweetened full fat coconut milk
  • 1 TBS lakanto
  • 1 TBS collagen protein
  • 1/2 tsp vanilla extract or vanilla bean powder
  • 5 drops vanilla stevia
  • pinch pink salt

Sugar-Free Maple Syrup


Keep unsweetened coconut milk in the fridge so that it's more solid for whipped cream. Best if using a can from overnight. Take the solid part of the cream out of can and add to Kitchen Aid or a coffee cup. Add all other ingredients and blend or stir. Place the whipped cream in the fridge or freezer until pancakes are done.

Turn the pan on to medium heat and add ghee to melt down. Ground up flax in a coffee grinder or Vitamix until a fine flax meal texture. Add to bowl and then combine the rest of the dry ingredients and stir until mixed together properly. Add in wet ingredients and either use a Kitchen Aid to mix, or if you don’t have one then mix all ingredients together as smooth as possible with a whisk or spoon. The batter needs to be a little sticky as well as wet so if its too dry then add more liquid. Once the pan is thoroughly heated started placing your batter on skillet. I like making little pancakes so I'll place 3 on the pan at a time. Cook for about 1-2 minutes each side or until you start to see bubbles appear through the pancake.

Flip, cook, and then stack them for a beautiful picture honoring your little creation that not only will taste delicious but also make you feel great too!

Fiber, protein, low carb, good fats, and zero sugar! What more could you want for breakfast besides maybe washing these down with a bulletproof coffee! Enjoy!
