Chocolate and Mint. Its hard to get someone to say no to a dessert when these two flavors are paired together. I remember going to my Nana and Papa’s house during the holidays and their coffee table was always stocked up with Peppermint York Patties. My mom had to pry me away from the bowl after she noticed I already had 3 too many. I was probably around 10 years old when I fell addict to those magical mint morsels, and then a couple years later I moved onto Mint Chocolate Chip ice cream from Leatherbys Creamery. I’d beg my mom to take me to get ice cream after dinner and I’d want to dine in, so I could get the complimentary cookie for eating there.
Fast forward years later and Im working at the Erewhon Tonic Bar in La where the most popular superfood ice cream on the menu is...Mint Chip Energizer. Even though I worked there and could have it anytime, I never got tired of it. I started to experiment at home by adding my own spin to the recipe. For those of you who aren’t familiar with the desserts at Erewhon, they aren’t like any dessert. These ice creams are superfood dense, sugar-free, and rich in good essential fats. At home I took the experience up a notch by creating Erewhon type ice creams on steroids. Id pack the blender full of whey protein and colostrum for muscle building and recovery, chinese herbs for immunity and extra superfoods for cell rejuvenation.
One night I decided to make a hardshell chocolate fudge to top an ice cream off that I called my Serotonin Sundae. It got me so high! I was buzzing on cacao and colostrum and at that moment I realized, “hey, I can make chocolate too.” So I gathered a bunch of things the next day that I would need to make my first official chocolate. As I perused the store for ingredients a nostalgic memory came in of me sitting on my Papa’s lap, watching TV while eating a peppermint york patty, and I thought “thats it, Chocolate Mints.”
The muse behind my chocolate mint dessert is still the same. My now 84 year old Papa, who still greets me with the biggest smile and his famous saying, “Love you all Hearts.” It wasn’t the peppermint york patty that left such an incredible impression, it was the memory of enjoying it with him. My goal in this industry is to take all of my favorite past time indulgences, and turn them into healthy, guiltless, and yet still delicious desserts.

These Thin Mint Superfood Squares are sugar-free, packed full of antioxidants and magnesium, and lit with a supercharged mct oil that drives ketones straight to the brain. A subtle hint of mint will leave you refreshed, and within a couple of bites you’ll be flooded with serotonin, leaving you grinning from ear to ear in eternal bliss. Chocolate is a Hell of a drug.

  • 7 TBS Cacao Powder
  • 4 TBS Lakanto
  • 2 pinches pink salt
  • 3 TBS Brain Octane Oil
  • 2 TBS Cacao Butter
  • 8 drops Vanilla Stevia

Green Mint Middle

  • 1 TBS Collagen
  • 1 TBS Lakanto
  • 1/2 tsp Greens Powder (Premier, Vibrant Health, Vitamineral Green)
  • pinch pink salt
  • 1 TBS Brain Octane
  • 1 TBS Cacao Butter
  • 12-20 drops Peppermint Spirits


Melt cacao butter in a pan on low until it becomes liquid. Take off the burner and let it cool down.

In a circular coffee mug, mix your dry chocolate ingredients, then follow with the cacao butter and brain octane and slowly stir in. Once you have a consistent base add spoonfulls of chocolate to each silicone ice cube mold. You should be able to get 8, and then set this in the freezer. 

Now mix your green mint middle in another cup and in the same fashion with wet ingredients following the dry. After about 5 minutes you can take the chocolate molds out of the freezer and now drop the green mint filling on top. Shake the ice cube tray to even out the squares and place it back in the freezer for another 5. 

Lastly, add your final layer of chocolate top the top of each green square and place it back in the freezer for another 25 minutes. You should be able to pop these babies right out and youll have perfect Thin Mint Superfood Squares!!! Enjoy!!
